Freezer Challenge Meals

Yesterday I posted about creating meals using ingredients already in my pantry and freezer.  Here's the list of meals I created.

Turkey, baked beans, cornbread mixed with extra corn
Turkey and 1/2 can alfredo sauce, zucchini, over rice
Turkey breast, stuffing, baked beans
Turkey sandwiches with tomato and alfalfa sprouts
Turkey soup with green onions, celery, carrots and cabbage with rice
Ground beef mixed with 1/2 can alfredo sauce, 1/2 rotini pasta, and can of diced tomatoes
Ground beef, pasta roni, can green beans
Hamburgers, buns, french/sweet potato fries
Chili & cornbread
Meatballs, artichokes and rice-a-roni
Chili Mac, can green beans
Tri-tip, pasta roni, 1/2 bag of salad mix
Abalone breaded and fried, 1/2 bag frozen green beans
Abalone spaghetti with 1/2 rotini pasta, 1/2 salad mix
Frozen Mexican night with frozen burritos and taquitos topped with sour cream and salsa and a side of sliced avocado
homemade burritos (two nights)
BLT wraps with alfalfa sprouts
Shrimp stir fry over rice with asian veggies and bean sprouts
Shrimp risotto with zucchini and a sprinkle of cheese
Tuna sandwiches with tomato soup
Chicken salad sandwiches with tomato and avocado slices
Ham sandwiches, fruit salad
Hot dogs, tater tots
TV Dinner (4 meals)
Soup and cornbread
Soup and beer bread
Soup and rice-a-roni

31 meals for lunch and dinner and I still didn't use up all of my canned diced tomatoes, tomato sauce, baked beans, and butternut squash.  Breakfast, as you can see from the previous post, has plenty of staples that planning out a meal is pointless.  I also have lots of frozen fruit to make smoothies.

I've been organizing my stuff to start the FCS (File Crate System) for all of my bills and paperwork.  Part of that system uses a weekly to do list and I thought I'd create my own.

Mendocino Botanical Garden

I'm in the process of transferring some posts from my old blog to here.  All TWO of them.
This one is originally from Summer 2010.  Enjoy.

This weekend we headed north to the Mendocino Coast for some abalone diving and along the way we stopped by a spot we'd never been to before.  Located just outside of downtown Ft. Bragg, the Botanical Gardens were full of life and color this past weekend.
A fuschia greets us as we pass through the gates to the Dahlia Garden and Ocean Trail.

I'd have to say that my favorite part was the Dahlia Garden followed closely by the Woodland Trail and Fern Canyon where we followed the creek and saw huge leafed plants called Dinosaur Food.  I think I want the Fern Canyon as my new backyard.

Dogs are welcome in the gardens (they get free ice cream at the cafe) as well are strollers and wheelchairs.
